Helicopter, because some pilots can steady it pretty well. With a boat you can't really turn off the ocean.

Missing my shot. If you have distance, and don't move, then you will only be spotted immediately 75% of the time And if you are semi-auto, you can have a fast back up shot, and then bug out.
Spoon combat (yes, fighting with a spoon) or helmet combat (fighting with a kevlar helmet)?

Fighting with a helmet because.. i have been smacked with one of those. It hurts more than a spoon. (unless it was a steel spork)

Playing with noobs or playing against pros?

In CQB it is way too much fun playing with noobs you can follow right behind them and pretend to be on their team for the whole game. They don't pay attention to the rules, so they don't know who's team i'm on until i shoot them
